Mexican White Trash tastes better than it sounds. Shredded chicken and Doritos combine to create an amazing flavor, it’s so good! This cheesy taco-flavored ground beef casserole may not look pretty, but it’s outrageously delicious! It’s my guess that this casserole is called “trash” because it’s not the most beautiful thing to look at.
It may not be a work of art, but it’s definitely tasty! Any time I’ve seen this, it’s been made with chicken. I wanted to see what it would be like made with ground beef–which of course was on sale pretty cheap this week.
I love this dish! It’s an awesome way to make Mexicanish food that isn’t the same old taco/burrito formula. I actually thought I invented this until I started downloading recipe apps, looking around, and found a bunch of takes on this haha oh well. I dig it.
MEXICAN WHITE TRASH
Mexican White Trash tastes better than it sounds. Shredded chicken and Doritos combine to create an amazing flavor, it's so good!
Ingredients:
- 1 bag Nacho Doritos, crushed.
- 2C shredded chicken
- 2C shredded cheese–or more (I always use more!!)
- 1 Can Cream of chicken soup
- 1 Can Rotel tomatoes
- 1/2C sour cream
- 1/2C milk
- 1/2 package taco seasoning (or more if you’d like)
Instructions:
- Preheat your oven to 350. Spray a 2-quart casserole dish with nonstick spray.
- Mix together all ingredients BUT Doritos.
- Layer half the Doritos (about 2 cups) on the bottom, then spread half the chicken mixture, the rest of the Doritos, and the rest of the chicken mixture. Add more cheese on top.
- Cover with foil and bake for 35 minutes.
- I usually double the recipe and cook it in a 9×13 pan for 45 minutes, just so we can have leftovers the next day.
