Slow Cooker Chicken Noodle Soup

Ingredients:
- 2 large boneless, skinless chicken breasts, about 1.5 pounds
- ½ lemon, juiced
- 3 tbsp fresh parsley, finely chopped
- salt and pepper, to taste
- 1 medium yellow onion, diced
- 1 tsp dried thyme
- 4 medium carrots, sliced into rounds or half moons
- 1 tsp dried rosemary
- 8 ounces Egg noodles
- 2 dried bay leaves
- 4 stalks of celery, sliced
- 8 c chicken stock or broth
- 4 cloves garlic, minced
Instructions:
- Add the chicken breasts, garlic, carrot, onion, celery, thyme, rosemary, chicken stock, salt, pepper, garlic, and bay leaves into the slow cooker. Stir everything until well incorporated.
- Cover and seal the slow cooker, then cook the mixture for about 6 to 8 hours on a low setting.
- Transfer the chicken breasts onto a clean plate, then use two forks to shred them into small pieces.
- Put the shredded chicken back into the slow cooker, then stir until well combined.
- Add the egg noodles, then stir until completely submerged. Cook for 5 to 10 more minutes.
- Add fresh parsley and lemon juice, then stir until well blended.
- Serve right away. Enjoy!
