Slow Cooker Italian Potatoes

This recipe for Slow Cooker Italian Potatoes offers a delicious and easy side dish that’s perfect for any meal. These potatoes are seasoned with Italian herbs and cooked to perfection, making them a crowd-pleaser for family dinners or gatherings.


Ingredients

  • 2 pounds baby potatoes (or red or Yukon gold potatoes, cut into bite-sized pieces)
  • 3 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes (optional)
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Wash and dry the potatoes. If using larger potatoes, cut them into bite-sized pieces.
  2. In a large bowl, combine the potatoes, olive oil, Italian seasoning, minced garlic, salt, black pepper, and crushed red pepper flakes (if using). Toss to coat the potatoes evenly.
  3. Transfer the seasoned potatoes to the slow cooker. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the potatoes are tender when pierced with a fork.
  4. About 15 minutes before serving, sprinkle the grated Parmesan cheese over the potatoes. Cover and continue cooking for the remaining time to allow the cheese to melt and coat the potatoes.
  5. Once the potatoes are cooked and the cheese is melted, transfer them to a serving dish. Garnish with fresh parsley.
