Smothered Cheesy Baked Chicken
Here’s a recipe for smothered cheesy baked chicken with mushrooms that’s also low in carbs:
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 1 teaspoon Italian seasoning
- Chopped fresh parsley for garnish (optional)
Instructions:
- Preheat your oven to 375°F (190°C). Grease a baking dish large enough to hold the chicken breasts in a single layer.
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and transfer it to the prepared baking dish.
- In the same skillet, add the sliced mushrooms and minced garlic. Cook for 3-4 minutes, stirring occasionally, until the mushrooms are tender and golden brown.
- Spread the cooked mushrooms and garlic over the chicken breasts in the baking dish.
- Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the top of the chicken and mushrooms.
- In a small bowl, whisk together the heavy cream, chicken broth, and Italian seasoning. Pour the mixture over the chicken and mushrooms in the baking dish.
- Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove the foil from the baking dish and broil for an additional 2-3 minutes, or until the cheese is golden brown and bubbly.
- Remove the baking dish from the oven and let it rest for a few minutes before serving.
- Garnish the smothered cheesy baked chicken with chopped fresh parsley, if desired, and serve hot.
